There are 3 choices of Caviar:


Beluga - Light Grey to Black eggs, Biggest Eggs, Salty Taste. Most Expensive
Ossatra - Brown to Greenish-Grey eggs, Smaller Eggs, Nutty Taste.
Sevruga - Light to Dark Grey Eggs, Smallest Eggs, Balanced Flavor. Least Expensive

The Roe comes from the Sturgeon fish and out of 27 species of Sturgeon fish and its close relative the Paddlefish, only 3 produce the eggs that becomes caviar.

Sturgeon have been swimming in rivers and seas from China to Scandinavia, but it is the Sturgeon of Caspian Sea (btw Russia and Iran) that produces most of the world's Top-end caviar.

Sturgeon takes years to mature - up to 20 years for the beluga, reproducing only once every 3-4 yrs. Over-fishing and ending up on UN endangered list cause it to have a food that is rare and expensive. A Kilogram of beluga retails for US$9,050 and it can only be bought in Europe and Asia because it's banned in the US.
